Potassium Sorbate

Food Preservative for Yeast and Mould Control

Written quotation within one business day · Documents shared with the quote

Potassium sorbate (E202) is the potassium salt of sorbic acid; a highly water-soluble, tasteless and odourless food preservative. It effectively suppresses yeast and mould growth in products below pH 6.5 and is used in cheese and dairy, bakery and pastry, juices and beverages, sauces, pickles and brined products, dried fruit and confectionery. PERDIST compares purity (≥ 99%), form (granular or powder), solubility, heavy metal analyses and food-grade documents against the supplier specification for wholesale potassium sorbate requests and offers FCC/E.P. grade options with their documents. For wholesale potassium sorbate the purity, the choice of granules or powder and the application pH are taken before the quotation, and the analysis document with a sample is shared. For cheese, beverage and bakery producers, packaging and delivery follow the production calendar. The regulatory usage limits are flagged at quotation stage.

Product and Application Details

Product definition Potassium salt of sorbic acid (C₆H₇KO₂, E202), food grade; granular or powder form.
Typical properties Purity ≥ 99% (dry basis), moisture ≤ 1%, white-cream colour, water solubility about 58 g/100 ml (20 °C), pH (1% solution) 7–10, heavy metals ≤ 10 mg/kg. Values vary by supplier specification.
Applications Cheese surfaces and dairy, cakes, pastry and bakery, juices and syrups, sauces and dressings, pickles and brines, dried fruit, confectionery and wine.
Formulation note Effectiveness increases as pH falls (ideal pH ≤ 5.5); typical usage 0.05–0.2%, checked against the permitted maximum for the product category. Granular form is dust-free and easier to dose.
Documents Specification, COA, food-grade (FCC/E.P.) conformity statement, heavy metal analysis, allergen and non-GMO statements and origin document are shared with the quotation to the extent the supplier provides them; halal and kosher certificates are checked per product.

About Potassium Sorbate

Potassium sorbate is more effective against yeast and mould, sodium benzoate against bacteria and yeast; benzoate needs a lower pH (≤ 4.5). Many products use both synergistically.
Efficacy drops markedly. Consider lowering the pH, reducing water activity or a different preservation system (e.g. nisin, culture-based protection).
As "preservative: potassium sorbate" or "preservative: E202", stated together with its function.
