Rice starch is a native starch separated from the rice grain and has the smallest granule size of all starches (2–8 microns). This fine structure gives a smooth, creamy texture and neutral taste, and it is used in light-coloured dairy products, desserts, convenience foods, sauces, bakery and dusting coatings. About Rice Starch

No. Rice flour is milled whole rice and contains protein and fibre. Rice starch is the purified starch fraction: whiter, more neutral and delivering higher viscosity.
Native rice starch tends to release water (syneresis) through freeze-thaw. Stabilised modified starches are preferred in frozen products, or the two are blended.
Rice is naturally gluten-free. For products requiring a gluten-free claim, ask the supplier for a cross-contamination statement and analysis report.
