Modified wheat starch is wheat starch made resistant to process conditions by cross-linking or stabilisation; it keeps the neutral taste and soft texture typical of wheat while limiting viscosity loss during heat treatment, mixing and cold storage. It is used in bakery fillings, creams and custards, ready sauces, frozen pastry, meat products and instant soups. About Modified Wheat Starch

Wheat for a soft, short-textured gel and neutral taste; corn for a stronger gel, higher clarity and a wider choice of E numbers. Where allergens are restricted, corn or rice is preferred.
Only with special grades analysed below 20 ppm and where target market regulations allow. To remove the risk, corn, rice or potato-based modified starches are recommended.
