What is dried parsley?
Dried parsley is made by washing fresh parsley leaves (Petroselinum crispum), removing the stems and drying the leaves; it adds green colour and a fresh herb note to formulations. Moisture is reduced below 8% and the product weighs about one tenth of the fresh leaf. It can be produced from flat-leaf and curly varieties; industry favours the flat-leaf type for its stronger aroma.
Drying methods and quality
Hot-air drying (40–60 °C) is the most common and economical method; some colour and aroma are lost. Freeze drying (lyophilisation) preserves colour and aroma far better but costs more and is used mainly in premium products. After drying the leaves are sieved and graded to 2–8 mm cut leaf; a finely ground form is also available.
Applications in food manufacturing
Instant soups and powdered sauces, potato and pasta products, meatball and filling mixes, salad dressings, butter and cheese seasonings, ready meals, decorative toppings. Typical usage in the finished product is 0.1–0.5%; it rehydrates quickly on contact with water.
Technical properties and quality criteria
Check moisture (≤ 8%), stem ratio (≤ 3%), colour vividness (dark green; yellowing indicates light or heat damage), sieve size, total and acid-insoluble ash, microbiological values (especially total plate count and yeast/mould) and pesticide residues. The drying method (hot air / freeze) should be stated in the specification.
What to check when buying
Where colour is decisive, prefer freeze-dried or new-crop hot-air product and compare samples for colour. Light-proof, moisture-barrier packaging is essential to preserve colour. Obtain the specification, lot-specific COA, origin document and, on request, a pesticide report with the quotation.
