Usage rate Typically 0.2–0.5% in meat products; per formulation in sauces and blends. Freshly ground or sealed packaging is preferred to limit aroma loss in ground pepper.
Documents Specification, COA and origin document; pesticide and microbiological reports on request, to the extent the supplier provides them. Steam-treated grades can be requested.
Shelf life and storage Typically 24–36 months whole, 12–18 months ground; store cool, dry and away from light and odours.
Packaging Typically 20–25 kg kraft bags or cartons with PE inner liner; pallets of 500–1000 kg. 5–10 kg packs considered on request.
Minimum order Usually one pallet (500 kg). Smaller quantities for trial production are stated in the quotation depending on product and supplier.
Shipping Road and sea freight; transported and stored in closed packaging in a dry, cool (≤25 °C), odour-free place away from sunlight.

About Black Pepper

Both are berries of the same plant. Black pepper is the unripe berry dried with its skin and is more aromatic; white pepper is the decorticated seed of the ripe berry, lighter in colour and more neutral in aroma.
Typically 0.2–0.5% depending on the product. Cracked or ground pepper is used in fermented sausage and cured meat, low-density ground pepper in cooked cold cuts; a trial batch is recommended for the target flavour.
Density shows how plump the berries are. Grades of 550 g/l and above contain fewer light berries, deliver higher piperine and volatile oil and mill more efficiently.
