What is rice fiber?

Rice fibre is an insoluble plant fibre purified from rice hull or rice bran. Total dietary fibre ranges from 60% to 90% by grade. Naturally free of gluten, soy and dairy, it is chosen for allergen-friendly and gluten-free formulations. It is neutral in taste and light in colour.

Functional properties

Water-holding capacity is medium to high (typically 1:4–1:7) and it also binds oil. In gluten-free doughs it provides structure and moisture retention; in extruded products it supports crispness. Some grades are surface treated to gain flow and anti-caking properties.

Applications

Gluten-free bread and bakery, allergen-friendly snacks, water binding in meat products, breakfast cereals and bars, dry mixes, nutrition products and pet food. Typical usage is 1–5%.

Technical properties and quality criteria

Check total dietary fibre, water-holding capacity, particle size, moisture, colour, heavy metal analyses (especially arsenic), microbiological values and gluten-free statement. For rice-derived products inorganic arsenic should be reported per lot.
