What are chili flakes?

Chili flakes are a spice made by crushing dried red peppers (Capsicum annuum) to 2–4 mm, sold with or without seeds. Unlike chili powder they give visible particles and release their aroma more slowly. In Türkiye the flakes of the Gaziantep, Kahramanmaraş and Şanlıurfa region are known for their oily, aromatic character; in world trade Indian and Chinese products are common.

How are they produced?

Ripe peppers are harvested and destemmed, dried in the sun or in dryers, crushed and sized by sieving. In some regions a small amount of vegetable oil and salt is traditionally added during crushing; this brightens colour and reduces dust but can shorten shelf life. For industrial purchases the specification must state whether oil and salt are present.

Applications in food manufacturing

Fermented sausage, cured meat and kebab seasonings; pizza and pasta toppings; salad and meze sauces; pickles and brines; snack coatings; lahmacun and pide mixes; retail spice packing. They replace chili powder where visible red particles and medium heat are wanted.

Technical properties and quality criteria

Check heat (SHU), colour (ASTA), moisture (≤ 12%; plus oil content for oiled product), seed ratio, particle size (sieve analysis), total and acid-insoluble ash, microbiological values and safety parameters (aflatoxin, pesticides, Sudan dyes). For oiled product the peroxide value matters for shelf life.

What to check when buying

Clarify whether the traditional oiled-salted product or an additive-free industrial product is required. Seedless product gives higher colour and less heat. Because of the aflatoxin and Sudan dye risk, prefer suppliers who provide lot-specific analysis reports. Obtain the specification, COA, origin document and safety reports with the quotation.

Wholesale sourcing: price and minimum order

The wholesale price of chili flakes is set by crop size, region/origin, seed and oil content, heat-colour grade and order quantity. The typical minimum order is one pallet (500 kg). Frequently asked questions

In traditional production, vegetable oil added during crushing brightens colour, reduces dust and preserves aroma. Because oil oxidises, shelf life is shorter than for additive-free product.
Seeded product is cheaper, hotter and lighter in colour; seedless product gives a deeper red colour and usually costs more.
Cool, dry, away from light and in sealed packaging. Additive-free product keeps typically 12–18 months, oiled product 6–12 months.
