The technical challenge in vegan ice cream

In traditional ice cream, milk protein and milk fat together provide emulsification, air incorporation (overrun), creamy texture and melt resistance. In vegan ice cream these functions are rebuilt with plant protein, vegetable fat, fibre and stabilisers. Because consumers expect the smooth, creamy structure they know from dairy ice cream, ingredient choice directly determines product success.

The role of pea and rice protein

With its emulsifying ability to stabilise fat droplets and its capacity to hold air bubbles, pea protein is the core protein source in vegan ice cream. It contributes to mix viscosity and body. Rice protein balances the profile with its neutral taste and raises protein value. In high-protein ice creams, a blend of the two offers both nutritional and sensory advantages.

The fat phase

Coconut oil, thanks to its solid structure, gives a creaminess similar to milk fat; blending with sunflower or rapeseed oil adjusts the melt profile. Breaking the fat into small droplets by homogenisation and coating them with protein is the basis of a smooth texture.

Body with fibre and starch

Citrus fibre binds water, reducing free water and limiting ice crystal growth; it also gives a creamy mouthfeel and improves melt resistance. Rice starch, with its small granules, gives a fat-like smoothness. Modified starches support stability through freeze-thaw cycles. In clean-label products, citrus fibre can be considered in place of some stabilisers.

Sweetening and freezing point

Sugar provides not only sweetness but scoopable softness by lowering the freezing point. In reduced-sugar products this effect should be balanced with fibres and suitable sweetener systems.

Taste management

The legume note of pea protein is balanced with chocolate, coffee, peanut, caramel and fruit flavours. In plain and vanilla varieties, choosing a high-purity protein grade matters even more.

Process

The steps are mix preparation, pasteurisation, homogenisation, ageing, freezing and hardening. Ageing time allows proteins and fibres to hydrate fully. Because temperature fluctuations in storage can grow ice crystals and create a sandy texture, the cold chain is important.
