What is a hybrid meat product?
Hybrid (blended) meat products are products in which part of the meat is replaced with plant protein and fibre. They offer consumers the familiar flavour and texture of meat while appealing to "flexitarian" consumers who want to eat less meat. For manufacturers they are a practical way to reach goals such as cost control, fat reduction and fibre enrichment.
Meat content and plant ingredient content
Meat content in hybrid products is usually 50-80%. As meat content falls, the effect of plant ingredients on texture and flavour increases. For high consumer acceptance, replacing 20-30% of the meat with plant ingredients is a common starting approach.
The role of pea protein
Pea protein binds water and fat in the meat mix, supporting emulsion stability and juiciness. It contributes to binding by forming a gel structure together with meat proteins. Thanks to its neutral taste it does not suppress meat flavour. Rice protein can be added to the blend to raise nutritional value.
Fibrous texture with textured wheat protein
Rehydrated textured wheat protein, with its mince-like appearance and chew, provides the texture of the portion replacing meat in hybrid meatballs and burgers. Adding meat stock or flavouring to the rehydration water brings the flavour of the plant portion into line with the meat. For gluten-free products, pea-based textured alternatives can be considered.
Fibre and starch
Pea fibre, citrus fibre and wheat fibre reduce cooking loss and keep the product juicy. Potato starch gives a firm, sliceable texture after cooking. These ingredients also help maintain texture in reduced-fat hybrid products.
Flavour and colour
As meat content falls, flavour intensity may drop. Spices such as onion powder, garlic powder, black pepper and ground cumin strengthen the familiar meat flavour. In terms of colour, plant ingredients can lighten the raw product, so natural colourings can be considered.
Labelling and regulation
In hybrid products the product name and meat content must be stated in line with regulations. The use of product names defined for meat products and their compositional requirements are set out in the Turkish Food Codex communiqué on meat products. Wheat-based ingredients must be emphasised as allergens because of gluten.
